I used to bake a lot before becoming a parent as it was something I really enjoyed. As Mr 2.5 has got older, he seems to love it too and so it's an activity we're starting to do more regularly together. I'm on the hunt for healthiER alternatives to processed snacks and foods to support us all in eating better at home and this is the first recipe we tried! Not the healthiEST because of the chocolate, but only a small amount of sugar in the mixture compared to other cake recipes... and they were DELICIOUS!
Here’s the recipe:
(Makes approxminately 12 small cakes)
• 2 bananas
• 2 eggs
• 100g soft butter
• 1/4 cup brown sugar
• 1 cup flour
• 1 tsp vanilla extract
• 1.5 tsps baking powder
• 1/2 cup chocolate chips/chunks (add more or less to taste)
Method:
• Mash the bananas.
• Add in all the rest of the ingredients!
• Mix well until the cake batter has formed.
• Scoop into cake cases.
• Bake in the oven at 180°C for 12-15 minutes (or until a skewer comes out clean)
